Delicious Vegan Pizza Recipe

Ingredients:

For the Dough:

– 2 ¼ teaspoons active dry yeast

For the Sauce:

– 1 cup tomato sauce

– 2 tablespoons tomato paste

– 1 ½ cups vegan cheese (store-bought or homemade)

– 1 small red onion, thinly sliced

– 1 bell pepper, thinly sliced

– 1 cup mushrooms, sliced

– 1 cup cherry tomatoes, halved

– 1 handful fresh spinach or arugula

– Fresh basil leaves (optional)

– Red pepper flakes (optional)

Instructions:

Prepare the Dough:

1. In a large bowl, combine the warm water, sugar, and yeast. Let it sit for about 5 minutes until the mixture becomes frothy.

2. Add the flour, salt, and olive oil to the yeast mixture. Stir until a dough forms.

3. Knead the dough on a lightly floured surface for about 8-10 minutes until it’s smooth and elastic. If the dough is too sticky, add a bit more flour.

4. Place the dough in a lightly oiled bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

Make the Sauce:

1. In a medium bowl, mix together the tomato sauce, tomato paste, minced garlic, oregano, basil, salt, and pepper.

2. Adjust seasoning to taste. Set aside.

Assemble the Pizza:

1. Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat up as well.

2. Once the dough has risen, punch it down and divide it into two equal portions. Roll out each portion on a floured surface to your desired thickness.

3. Transfer the dough to a baking sheet or pizza stone.

4. Spread a generous amount of the prepared tomato sauce over the dough, leaving a small border for the crust.

5. Sprinkle the vegan cheese evenly over the sauce.

6. Add your toppings: red onion, bell pepper, mushrooms, cherry tomatoes, and spinach or arugula.

7. Bake in the preheated oven for 12-15 minutes, or until the crust is golden brown and the vegan cheese is melted.
